First Cookery Post 


As I mentioned in my last post, I have taken up getting to grips with cooking. So I thought that today was a good day to start showing. 


Dublin Coddle


Ingredients:
.1-1.5 pounds pork sausage (cut thickly)
.1-1.5 pounds smoked ham (1-inch dice)
.1 Quart (2 pints) boiling water
.2 Large onions. peeled. thickly sliced
.2 Pounds of potatoes. peeled. thickly sliced
.4 Tbsp of chopped parsley 
.Salt and Pepper to taste


Prep
.Place the sausage + ham in boiling water, 5mins (keep liquid)
.Meat into a large saucepan.with onions,potatoes and parsley.
.Add enough stock to not quite cover the contents.Cover pot.simmer gently 1hour. or until the liquid is reduced by half and all ingredients are cooked not mushy. 
.May need to remove lid during the last half cooking.
.Season with salt+pepper
.Can add veg within it (goes nicely with parsnips)
.Serves 8
